Crispy Corn Patty

Corn-among those versatile and delicious tasting grains that not only makes your meal wholesome and nutritious but also add lot of flavors to it. Corn makes every food encounter special, isn't it ? A long drive on a rainy day is incomplete without stopping by to have those roadside grilled corns with some squeezed lemon and salt on it. Every summer BBQ party have to have some mouth watering corns on skewers. Every diet regime where you are allowed to eat one thing in any proportion and that is corn. Be it commonly served starter or very famous corn masala. And hello most important every movie night is incomplete without that bucket of Caramel or butter Pop corn! Full of Fibers, Corn is extremely beneficial for your health and considered as one of the super food available.

While I was growing up, I have always seen my mom making different recipes of fresh corns coming straight from my grandfather's farm. They used to be so fresh and abundant in quantity that mother had to find ways to use them ! and there my friends I learnt this quick easy and delicious recipe of Crispy corn tikkis (patty). Thank you Mom for this one! 🙂

Including this recipe to the Blog post was not a part of the plan however the love and response I received on my recent corn patty post on Instagram was overwhelming! I knew it, I  have to post this for all my foodies friends out there! So Voila!

Lets get cooking:

Yield: 6-7 Patties
Prep Time: 30 mins
Cook Time: 15 mins

Ingredients:
1 cup Steamed corn kernels
½ cup Cabbage (Purple or yellow) [Optional]
½ cup Red Onion
½ cup Cilantro
2 medium green chilies
½ Cup Corn flour (Corn Atta)
1 TBSP Gram Flour
Red chili powder
Chat masala
Coriander Powder
Cumin Powder
Half Lemon
Salt
Pepper
Oil

Directions:

Add corn kernels, cabbage, onion, chilies and cilantro to the food processor one by one until they turn coarse. We are not looking for thin paste like consistency here. You can also add all the veggies all at once in the processor however I prefer doing it one by one and then mixing it all together.

Take a big bowl and add the mixture to it. Now add corn flour, gram flour, red chili powder, chat masala,coriander powder,cumin powder, salt, and pepper. Squeeze half a lemon to it. Mix it all together. Add more flour if you think the mixture needs more binding. You can check if you can make small patty out of the mixture and make the changes accordingly. Also we are adding both green chilies and red chili powder, the reason being corn is sweet by nature and so this will balance the sweetness.

Now heat the pan to medium and grease it with some olive oil, butter or any vegetable oil at hand and preference. Once the pan is hot enough, put the patties on to the pan and shallow fry until nice and golden brown on both sides. Do not flip frequently and keep the flame medium so that the patty is cooked thoroughly without burning on outside.

Take out and serve hot with any dip, ketchup, yogurt or just on its own. Your family is going to love this!

Notes:

  1. Variety: You can use any other vegetable like carrots or even paneer instead of cabbage.
  2. Storage:You can store this for 1 day in refrigerator.
  3. Eat with: Mint chutney or chili ketchup will taste divine.
