Fresh Apple Pie | Fresh Apple Picking experience

Earlier this season I went on Apple picking trip ( Amazing Sunday ) and it was super awesome experience.

I Could not agree more...
I have been wanting to go there for couple years now.. Last year by the time I planned the season was almost over and all Orchards were out of Apples!
So this year I recalled it on time and immediately decide to go for it. Worth it worth it worth it.
Its the experience that counts! Ofcourse you get lots of apples 🍎🍎🍎 But the whole experience is just eventful.
and I am always up for such experiences.
Got 3 types, Golden delicious are my new fav now. What I loved the most about the whole thing is you have liberty to choose, eat, pick, Have fun!
Definitely People were mindful, wearing masks, and Orchard was big enough so no crowded spots seen.

With so many fresh apples, I couldn't think of anything else but make delicious apple pie. It was my first time making a pie but so satisfied and happy as the pie came out perfect. Here is simple recipe for you guys! Hope you like it.

Ingredient:
6-7 Golden delicious Apples, cored  
(or 5 cups thinly sliced)
(keep the slices in water
 until needed to avoid oxidation) 
1 1/2 tsp cinnamon
1 tsp cardamom powder
6 Tbsp unsalted butter
2 Tbsp all-purpose flour
2 tbsp apple sauce
(unsweetened)
1/4 cup water
1 cup coconut sugar 
1 egg + 1 Tbsp water,
for egg wash
3-4 saffron sticks 
soaked in warm milk

Ingredients for Butter Pie 
Crust Dough Recipe:
2 1/2 cups all-purpose flour 
plus more to dust
1/2 Tbsp granulated sugar
1/2 tsp sea salt
1/2 lb COLD unsalted butter 
(2 sticks) diced 
into 1/4" pieces
6 Tbsp ice water (6 to 7 Tbsp)

Directions:
Steps to make the Pie Crust:

  1. Add flour to a food processor and pulse together with sugar and salt.
  2. Add cold butter cubes and continue to pulse until coarse crumbs forms and some almond size pieces forms when pressed in between palm.
  3. Add measured ice water and pulse just until moist clumps/ small balls of dough form. Pinch a piece of dough between your fingers and if it sticks together, it’s done right. If not add more ice water 1 tsp at a time and pulse little more.
  4. Take out the dough to a clean surface, and gather together into a big ball. Do not over knead the dough – it should not be smooth. Divide dough in half and form 2 disks. Cover with plastic wrap and refrigerate until ready to use.

Steps to make Pie Filling:

  1. Melt butter in a sauce pan over medium flame. Whisk in the flour then simmer for about 1 minute, whisking constantly. Add in 1/4 cup water, sugar, apple sauce and bring to a boil. Reduce heat and continue to simmer for 3 minutes, Whisk frequently for couple minutes and then remove from heat.

  2.  In a medium bowl add thinly sliced apples. Sprinkle the top with 1 1/2 tsp cinnamon and 1 tsp cardamom powder  and toss to combine. Pour the ready sauce over the apples and stir to coat the apple slices completely.

Steps to make Pie:

  1. Preheat the oven to425˚F. Sprinkle your work surface with some flour and roll out pie crust to a 12" diameter circle. Transfer it to the 9" Pie plate. Add apple mixture in the center and spreading slightly towards the edges. Keep sufficient margin to fold the edges.

  2. Bake for 15 minutes. Reduce the heat to 350˚F and continue baking for another 45 minutes or until apples are cooked through and filling is bubbling. Rest at room temp for about 1 hour before serving.

    Serve as is or with your favorite ice-cream. This is oh so delicious Pie, you don't want to miss out!
