Ingredients: 2 slices of sourdough bread (or any bread) toasted well 1 Large ripe avocado 1/2 Beetroot diced salt and pepper lemon juice Thyme chilli flakes olive oil
Directions:
Pre heat the oven at 400 (F)
On the baking sheet add the beetroot , drizzle some olive oil, salt and Thyme.
Toss it in the oven for 20 min.
Meanwhile, In a bowl,, Mash the avocado until smooth, add salt, pepper, lemon juice to it.
Take out the beetroot, let it cool for 5 minutes.
Slather the toast with avocado mash, add the beetroot on top, sprinkle some chilli flakes and thyme and voila,
the Grilled beetroot is nice and crisp on outside and juicy on inside. Every Bite screams delicious!
