Fresh Basil-Spinach Pesto Recipe | Smooth, Creamy Pesto

Spring means many things to me...! Fresh colorful produce, tomatoes, seafood, berries, and PESTO!. It's one of those foods that has the ability to completely transform and uplift any dish! Whether it's livening up grilled Meat or topping your favorite pasta, drizzle on pizza, pesto makes anything it touches turn to gold or should I say actually to a perfectly green goodness.
Its bright alluring green color makes it so popular, a refreshing burst of flavor which is light, herbal and incredibly delicious.

Not only it is super versatile, but also super easy to make! You can create classic Pesto with Garlic, Basil and Parmesan cheese or you can switch the green Basil with Spinach, avocado, peas... Possibilities are simply endless.

So here is the thing, I was craving pesto for quite a while. So while keeping up with limited pantry options during this stay home period, I whipped up some smooth, creamy delicious Pesto with available ingredients. Hope you like it!

Ingredients:
Handful of Basil
Handful of spinach
3-4 garlic cloves
1 tbsp Feta cheese
2 tbsp Olive oil
1/2 tbsp Pine nuts + 1/2 tsp pistachios
1 tbsp Lime juice
Parmesan Cheese (optional)

Directions:

1. In a food processor or high speed blender, add all the ingredients. Do not add Parmesan cheese if you are not going to use your Pesto immediately and want to store in freezer like me. It can be added later when you are ready to use the pesto.

2. Start blending, keep checking in between and scrape the sides if needed. Blend it until smooth paste.

3. Within few minutes your Pesto is ready to be devoured with some pasta or my favorite Pesto delicacy- a Caprese sandwich.

Pesto can stay fresh and edible up to few weeks when stored in an air tight container inside the freezer. Just thaw it for an hour before using and voila its ready to be relished!
