Now you might be thinking out of all beautiful ingredients out there in the Market what made me create this dish? Why Quinoa? I know the love and hate relationship people have for this ancient whole grain. Trust me we all are in the same boat!
Quinoa has always been a debatable lunch or dinner option in my house. I being the quinoa lover always look for ways so that I can convince my better half to eat this healthy nutritious grain and while doing so I came up with an idea of this yummy mouthwatering combination. Loaded with Protein Quinoa is not only good for keeping you healthy but also plays important role if you are counting on your calories and in search of some great gluten free options.
Simply devoid of any taste this diverse whole grain acquires the taste of what you combine it with. So you can go for anything and everything! Sky is the limit! Definitely a go to option for busy cook and if you only know how to cook rice, you are the champion already!

Yield: 5-6 Patties Prep Time: 20 mins Cook Time: 15 mins Ingredients: ½ cup cooked and ground Quinoa (use seasoned) ½ cup grated Paneer ½ Tsp Red chili powder ½ Tsp Coriander powder ½ Tsp Cumin powder 2 Tsp freshly chopped Cilantro 1 small finely chopped green chili ½ Tsp ginger garlic paste 2 Tsp roasted corn kernels 2 Tsp olive oil 1 Tsp Lemon juice Salt and Pepper
Directions:
Take ½ cup cooked and ground quinoa in big bowl. Add 1/2 cup grated paneer, red chili powder, coriander powder, cumin powder, chopped cilantro, ginger garlic paste and finely chopped chili to it. Add some salt and pepper to taste and ½ Tsp of olive oil.
Mix everything using spatula and form patty dough like consistency.
Take small portion of this mixture and form small patties out of it. You can use mold to get nice shape or just do yourself just like I did.
Heat a non stick pan and grease it lightly with olive oil. Put the patty in the pan and shallow fry until nice golden brown on both sides.
Now take some roasted corn kernels in small bowl, add some red chili powder, salt to taste and squeeze some lemon juice to it.
Take the patty off the pan and garnish with corn kernels on top.
Serve hot with Minty chutney or ketchup of your choice.
Notes:
- Variety: You can use shredded chicken instead of paneer.
- Storage:You can store this for 1 day in refrigerator.
- Eat with: Mint chutney or even some yogurt will taste divine.
