2 slices of Sourdough bread or any other bread.
parsley 1-2 sprigs
1 Egg
salt and pepper
Leftover Potato curry
Lemon Juice

1. Toast the bread on Medium high heat until slightly crispy and keep it aside
2. In a small bowl, mash up potato curry. now you have 2 options: 1. If you using Dry potato curry, simply mash it using fork until potatoes are partially mashed. 2. if you are using gravy like potato curry, separate the gravy and potatoes and then mash potatoes only. Gravy will make it soggy and we don't want that.
3. Heat a pan again and crack open 1 egg directly in it, cover it with lid and let it cook for 3-4 mins. Open the lid sprinkle salt and pepper on top.
4. Time to Assemble, Slather the toast with potato mash curry, drizzle some lemon juice, and place your Sunnyside egg on top. Garnish with parsley.
